(Reno, Nev.) —The rise in egg prices has caused some restaurants to adapt to climbing expenses in an effort to ensure their supply of eggs for patrons.

The Avian flu is one of the reasons for higher prices as the U.S. Centers for Disease Control (CDC) calls for culling millions of infected poultry , reducing supplies nationally.

That’s leading to food inflation.  The Bureau of Labor Statistics’ Consumer Price Index (CPI) showed an increase of 0.4 percent in January.

Last month, Nevada Legislators passed AB171 to ease cage-free restrictions for suppliers, yet restaurant owners say prices remain the same. While owners struggle to shield patrons from digging deeper into their pockets, their overhead grows daily, compelling them to strategize vendor purchases and seasonal demand or pass extra expenses to customers.
